Ingredients

- 2 lbs boneless skinless chicken breast
- 3.5 tbsp potato starch
- 1/2 tsp salt
- 1/4 tsp black pepper
- Cooking spray
- 3 tbsp honey
- 3 tbsp low-sodium soy sauce
- 1 tbsp rice vinegar
- 1 tsp toasted sesame oil
- 1/2 tsp fresh ginger
- 1 tbsp cold water
- Sesame seeds for garnish
Instructions
- 1. Cut chicken into 1-inch bite-size pieces
- 2. Toss chicken with potato starch, salt, and pepper until evenly coated
- 3. Arrange in air fryer basket in single layer - don't crowd
- 4. Spray with cooking spray
- 5. Air fry at 390°F for 20 min, flip at 10 min
- 6. While chicken cooks, whisk honey, soy sauce, rice vinegar, and ginger in a small saucepan over medium heat
- 7. Let sauce simmer and reduce 3-4 min until it coats the back of a spoon
- 8. Kill heat, stir in sesame oil
- 9. Toss crispy chicken in sauce
- 10. Top with sesame seeds and serve
