Teriyaki Chicken Bowls

Super kid-friendly. Sweet, sticky, zero weird textures. Works as rice bowls, lettuce wraps, or flour tortilla "Asian tacos" with shredded cabbage and sesame seeds.

Ingredients

g PROTEIN
  • 2.5 lbs boneless skinless chicken breast
  • 1/3 cup low-sodium soy sauce
  • 2 tbsp honey
  • 2 tbsp rice vinegar
  • 1 tbsp fresh ginger (squeeze tube works)
  • 1/2 cup chicken broth
  • 1 tbsp cornstarch (optional, for thicker sauce)
  • 1 tbsp cold water (for cornstarch)

Instructions

  1. 1. Add chicken to crockpot.
  2. 2. Mix soy sauce, honey, rice vinegar, ginger, and broth. Pour over chicken.
  3. 3. Cook on LOW 4 hours or HIGH 2 hours.
  4. 4. Shred chicken with two forks.
  5. 5. Optional: Mix cornstarch and water, stir into pot for thicker sauce. Cook 10 more minutes.
  6. 6. Serve over rice with steamed broccoli. Top with sesame seeds.
