Ingredients

- 2.5 lbs boneless skinless chicken breast
- 1/3 cup low-sodium soy sauce
- 2 tbsp honey
- 2 tbsp rice vinegar
- 1 tbsp fresh ginger (squeeze tube works)
- 1/2 cup chicken broth
- 1 tbsp cornstarch (optional, for thicker sauce)
- 1 tbsp cold water (for cornstarch)
Instructions
- 1. Add chicken to crockpot.
- 2. Mix soy sauce, honey, rice vinegar, ginger, and broth. Pour over chicken.
- 3. Cook on LOW 4 hours or HIGH 2 hours.
- 4. Shred chicken with two forks.
- 5. Optional: Mix cornstarch and water, stir into pot for thicker sauce. Cook 10 more minutes.
- 6. Serve over rice with steamed broccoli. Top with sesame seeds.
