Lemon Herb Chicken

Greek-inspired crockpot chicken. Bright, herby, and super clean. Serve with cucumber salad, cauliflower rice, or pita. 240 cal | 42g protein | 2g carbs | 6g fat per serving.

Ingredients

  • 3.5 lbs boneless skinless chicken breast
  • 1/2 cup lemon juice (about 4 lemons or 1/2 cup bottled)
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • 1 tbsp oregano
  • 1 tsp thyme (optional)
  • to taste salt
  • to taste black pepper

Instructions

  1. 1. Add chicken to crockpot.
  2. 2. Pour lemon juice, broth, and olive oil over it.
  3. 3. Sprinkle oregano, thyme, salt, and pepper on top.
  4. 4. Cook on LOW 6-8 hours or HIGH 3-4 hours.
  5. 5. Check at 6 hours - if it shreds easy with a fork, it's done.
  6. 6. Shred and mix back into the juices. Serve with cucumber salad or over cauliflower rice.
