Ingredients

- 3.5 lbs boneless skinless chicken breast
- 1/2 cup lemon juice (about 4 lemons or 1/2 cup bottled)
- 1 cup chicken broth
- 2 tbsp olive oil
- 1 tbsp oregano
- 1 tsp thyme (optional)
- to taste salt
- to taste black pepper
Instructions
- 1. Add chicken to crockpot.
- 2. Pour lemon juice, broth, and olive oil over it.
- 3. Sprinkle oregano, thyme, salt, and pepper on top.
- 4. Cook on LOW 6-8 hours or HIGH 3-4 hours.
- 5. Check at 6 hours - if it shreds easy with a fork, it's done.
- 6. Shred and mix back into the juices. Serve with cucumber salad or over cauliflower rice.
