Chinese Honey Chicken

Ingredients
- 3.5 lbs boneless skinless chicken breast
- 1/3 cup honey
- 1/3 cup low-sodium soy sauce
- 3 tbsp rice vinegar
- 1.5 tbsp toasted sesame oil
- 1.5 tsp fresh ginger (or squeeze tube)
- 3/4 cup low-sodium chicken broth
- 1 pinch red pepper flakes (optional)
- 2 tbsp cornstarch (for thickening)
- 2 tbsp cold water (for cornstarch slurry)
- to taste sesame seeds (garnish)
- to taste green onion tops (garnish)
Instructions
- 1. Add chicken to crockpot. Pour honey, soy sauce, rice vinegar, sesame oil, ginger, and broth over it.
- 2. Add red pepper flakes if using. Put lid on.
- 3. Cook on LOW 6-8 hours or HIGH 3-4 hours.
- 4. Shred chicken with two forks right in the pot.
- 5. Mix cornstarch and cold water in a small bowl until smooth.
- 6. Pour cornstarch slurry into pot and stir. Cook on HIGH with lid OFF for 15-20 min until sauce thickens.
- 7. Serve over rice, top with sesame seeds and sliced green onion tops.
