Honey Lime Chicken

Dead simple crockpot chicken - high protein, low calorie. Perfect for taco bowls, lettuce wraps, or over rice. 237 cal | 42g protein | 9g carbs | 2g fat per serving.

Ingredients
- 2.5 lbs boneless skinless chicken breast
- 2 tbsp honey
- 4 tbsp lime juice (about 3 limes)
- 1 cup low-sodium chicken broth
- 1 tbsp cumin
- 1 tsp smoked paprika
- 1 tsp chili powder
- to taste salt
- 2 cups bell peppers, sliced
Instructions
- 1. Put chicken breasts in crockpot.
- 2. Pour the honey, lime juice, and broth over it.
- 3. Sprinkle cumin, paprika, chili powder, and salt on top.
- 4. Put the lid on and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
- 5. Add sliced bell peppers in the last 1-2 hours so they don't turn to mush.
- 6. Shred chicken with two forks right in the pot.
- 7. Stir it back into all those juices and serve.
