Honey Lime Chicken

Dead simple crockpot chicken - high protein, low calorie. Perfect for taco bowls, lettuce wraps, or over rice. 237 cal | 42g protein | 9g carbs | 2g fat per serving.

Ingredients

  • 2.5 lbs boneless skinless chicken breast
  • 2 tbsp honey
  • 4 tbsp lime juice (about 3 limes)
  • 1 cup low-sodium chicken broth
  • 1 tbsp cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • to taste salt
  • 2 cups bell peppers, sliced

Instructions

  1. 1. Put chicken breasts in crockpot.
  2. 2. Pour the honey, lime juice, and broth over it.
  3. 3. Sprinkle cumin, paprika, chili powder, and salt on top.
  4. 4. Put the lid on and cook on LOW for 6-8 hours or HIGH for 3-4 hours.
  5. 5. Add sliced bell peppers in the last 1-2 hours so they don't turn to mush.
  6. 6. Shred chicken with two forks right in the pot.
  7. 7. Stir it back into all those juices and serve.
