Citrus Carnitas

Lean carnitas using pork tenderloin instead of shoulder - way lower fat, still tender. The citrus makes it bright and the crispy bits are addictive. 200 cal | 38g protein | 5g carbs per serving.

Ingredients

  • 2.5 lbs pork tenderloin
  • 1/2 cup orange juice (about 2 oranges)
  • 1/4 cup lime juice (about 2 limes)
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 cup chicken broth
  • 1 jalapeño, sliced (optional)

Instructions

  1. 1. Add pork tenderloin to crockpot.
  2. 2. Pour orange juice, lime juice, and broth over it.
  3. 3. Sprinkle cumin, chili powder, oregano, and salt on top.
  4. 4. Add jalapeño slices if using.
  5. 5. Cook on LOW 6-8 hours.
  6. 6. Shred the pork with two forks.
  7. 7. For crispy edges: spread shredded pork on a sheet pan and broil 3-5 minutes. This is the move.
  8. 8. Serve as street tacos, taco bowls, or quesadillas.
