Citrus Carnitas

Lean carnitas using pork tenderloin instead of shoulder - way lower fat, still tender. The citrus makes it bright and the crispy bits are addictive. 200 cal | 38g protein | 5g carbs per serving.

Ingredients
- 2.5 lbs pork tenderloin
- 1/2 cup orange juice (about 2 oranges)
- 1/4 cup lime juice (about 2 limes)
- 1 tbsp cumin
- 1 tbsp chili powder
- 1 tsp oregano
- 1 tsp salt
- 1/2 cup chicken broth
- 1 jalapeño, sliced (optional)
Instructions
- 1. Add pork tenderloin to crockpot.
- 2. Pour orange juice, lime juice, and broth over it.
- 3. Sprinkle cumin, chili powder, oregano, and salt on top.
- 4. Add jalapeño slices if using.
- 5. Cook on LOW 6-8 hours.
- 6. Shred the pork with two forks.
- 7. For crispy edges: spread shredded pork on a sheet pan and broil 3-5 minutes. This is the move.
- 8. Serve as street tacos, taco bowls, or quesadillas.
